Brazier pan advice

I have braised short ribs before and they turned out great and I want to do it again but for 8-10 people. My dutch oven is only big enough for small quantities. I am considering a large brazier pan, either 18qt or 24qt. Questions? Are these too big? Could I get away with braising in a large roasting pan? Thanks.
