last night i finally got around to making the shortribs braised in chimay ale from the zuni cafe cookbook. man, they were good! of course, short ribs are inherently good. nevertheless, these were delicious. we served them with roasted fennel and spaetzle (also from zuni cafe book, but i used ap flour instead of cake flour cause that's what i had around). paired with a hearty cotes du rhone, a good match.
