I have a perfectly fine recipe for muffins that uses Raisin Bran and a mix of whole wheat and white flour. This afternoon--I think feeling guilty about the Pasta in Cheese Sauce I'm making for dinner--I decided to make the muffins even healthier. I cut the oil from 4 to 2 T, made one of those flax seed oil and then added yogurt and some pureed pitted prunes. Subbed out half of the white flour with oatmeal (whirred in the FP), used only egg whites and then decided at the last minute to add a grated apple along with the extra raisins and walnuts. First batch came out of the oven (they're mini because that's the only size muffin pan I own), I let them cook a little and gave one to my husband. He took a bite and as he walked away said "Boy, that sure tastes healthy." I laughed for a few minutes and then tried one. He's absolutely right, and not really in a good way. So what have you made lately that may not taste good but certainly tastes "healthy"?
