The much beloved Fremont Diner https://www.chowhound.com/post/fremon... re-opened Wednesday as Boxcar Fried Chicken & Biscuits.
The model is to streamline operations using fewer staff serving a smaller menu. An initial report from a shy chowhound says not enough staff on hand for even the slimmer system and the fried chicken tastes completely different and not in a good way. Cartons of Sysco fried chicken were stacked on the racks. Cryo bags of pre-made slaw in white boxes were also sighted. Fries are from frozen crinkle-cut. A cheap plastic (non-green) knife could not cut through the fried chicken.
When I asked if Popeye's would be a better bet, this source replied, "By a mile."
Sounds like a much different place than Fremont Diner. The website states, "Here at Boxcar we are focused on local, seasonal ingredients. Everything is made fresh daily with locally sourced ingredients. Boxcar is a family focused restaurant offering fast service + quality food. " I'm not sure how to square this with the observations.
