Just bought a huge bag of dried Hatch green chiles. . .

We want to make a green chile salsa similar to one that we had in Las Cruces. Does anyone have any ideas? It was served warm alongside a cool, creamy one. Also, though we've made green chile quite a bit and love it, we've never tried w/ the dried, mesquite-smoked ones. Does anyone have any insight or other great ideas into their use? Thanks in advance.
