I bought it, now what - "chinese" ingredients

any suggestions for use of any of the following, starting with the item my husband laughs about - probably the oldest item in my cupboard -

tientsin preserved vegetable (the stuff in a crock)

also shredded preserved vegetable (hot) - this one looks like shredded daikon and is from Pearl Foodstuffs Co in Wanzhou, Chongqing - I thought it might be what is called for with sauteed stringbeans

pigeon brand fermented hot and sour mustard greens from thailand - includes sugar, soy sauce, chili and lime juice as well as the mustard greens

"odour frying fish with chile" from Taiwan - contents tiny fish, black bean, garlic, chile
sesame oil, spice - is this for cooking or simply a condiment for rice?
