Did anyone see the latest Iron Chef America broadcast with Doug Williams of Boston's Mida? His Sous Chef was also Seizi Imura of Cafe Sushi in Cambridge.
The only mention of their restaurants was the "MIDA" Doug had stenciled on the collar of his chef's jacket (clever!).
I won't tell you who won, but the secret ingredient was: Peas!
DISH 1: Hawaiian sweet shrimp tartare, snow peas, quail yolk, hazelnut foam, crispy sun choke chips, shrimp head (squeeze juice from head over dish)
DISH 2: Petits pois chawanmushi, over pea puree, Japanese cilantro
DISH 3: Cacio pepe-style split pea gnocchi, pea tendrils, lobster roe, parmigiana reggiano
DISH 4: Sable fish, with snow peas, pea sprouts, white soy-pecan-brown butter sauce
DISH 5: Pea gelato, chilled pea soufflé, shaved white chocolate
