Boston Chef visiting NY, must-go restaurants, these worth it?

My Fiance has never been to N.Y.C., so we're planning a visit. Me being a chef, I would like to try several restaurants for 'Apps' as aposed to a couple of places for 3-5-7-9 course meals. Are these places worth it, or overrated?: Veritas, Jean George, Alain Ducasse, Babbo, Aureole?, Bouley, Cafe Boulud, Daniel, Danube, Olive's, English (New), Le Bernardin, Les Halles, Per Se, Masa, Nobu & Craft. Obviously we can't go to them all, nor do we have deep pockets, but which of these are worth this special trip? Maybe some for good lunch deals, some for late night? Also, not food related, but a hotel suggestion in an area that would be in a good proximity for all of these places, if that's even possible. Any other restaurant ideas are highly welcome.
