"Bosco Tartufo" Tuscan Truffled Pecorino

I just bought a half pound of this stuff at the Pennsylvania Macaroni Company in Pittsburgh (http://www.pennmac.com/). Just WOW! It's made with white and black truffles, and is less salty many pecorinos I've tasted. I've been eating it shaved over buttered noodles, in shards drizzled with honey on crusty bread, and straight up. I hope to make some risotto wiht porcinis as a most decadent application. It's the best truffle experience for the money I've ever had. It was only about $14/lb. and every sliver fills your sinuses with musky goodness. Highly recommended.
