bored to death eating in LA

I've decided that the best cuisine in LA is Korean, specifically Hamji Park for the pork ribs and kim chee stew. I go there all the time, but would like to branch out a little. Please give your suggestions for the BEST, MOST AUTHENTIC, and inexpensive of the following: Taiwanese, Guatemalan, French bread, Morrocan, Shanghai, Mexican, and other ethnic delights. Looking for food you can't live without.
