I'm looking to add some more knives to my niece's collection. I seem to recall her mentioning a boning knife in passing one day so I am looking for the best one available. Currently, she has this old Henckels boning knife that can't be sharpened:
I checked some old threads here but there didn't seem to be clear favorite in this category. Maybe some feel this knife is not essential. If so, I can re-consider this plan.
Anyway, I was wondering what do you feel is the best boning knife? Also, are they all sharpened the same way? Most boning knives I see have narrowing blades that seem difficult to sharpen. I don't sharpen knives so I don't know anything but I thought I would ask before I make a purchase.
