I planned on making chicken parmesan tonight and argh!! forgot we have a kids B-day party an hour away at 3pm. Was hoping someone might have a good (meaning tried n true) recipe I could make in the slow cooker so that when i get home with a jacked up/tired 4 year old dinner is ready. I have a well stocked pantry so have lots of things on hand (canned tomatoes, beans, assorted rices, sauces, salsas, cheese etc.) so willing to try anything. My son eats everything so no worries there. I plan on making appropriate sides before we leave too.
Oh, and yes I know there are lots of "quick" easy recipes I could do on the stove top but I really am looking for something for the slow cooker since anyone who has ever come home late with a 4 year old on a birthday bender can attest "quick" even 15 minute quick can be too much!! ;)
