Bon Apetite morphing into Gourmet?

Just got the Gourmet replacement Bon Apetite, Feb. issue, and it felt like I was reading dear departed Gourmet. The look of the magazine is more artistic and upscale than I remembered, and the lengthy and depth-y article on tofu was of Gourmet literary caliber.

Maybe I won't ask for my money back after all.
