Bologna advice, please?

Our group of 4 adults need help planning details of the last portion of a trip planned for late April. It's not our first trip to Italy, but our first time to this region. We begin this time flying into Naples and traveling south to the Almafi Coast, afterward pick up a a car and head to Passignano as a base, before heading to San Gimignano (Il Vicario and an advanced cooking lesson). We then plan to ditch the car before heading into Bologna on a Thursday around 1:00. So, we have from Thursday afternoon until Saturday night. My husband is a physician, so would like to see some of the medical museum stuff in Bologna. Otherwise, the focus of this trip is on food. We would like to find a food tour/guide that is not an all-day affair (not Italian Days 9-10 hrs long) We have seen some that are 3-3.5 hr walking tours which sound more appealing. Can anyone recommend one?

Additionally, we'd especially like to find a way to get to Modena for a traditional balsamic tour, but have little interest in coupling it with a prosciutto factory tour. Does anyone know of a tour that would pick us up in Bologna and take us to Modena? We'd want something that might include a nice lunch. We could attach it to a parmesan tour, perhaps, though that, too, is of less interest to my compadres (I asked--tasting, yes, but production, no--I apologize if this sounds testy) When I broached this idea, it may have been the early hour that was the issue, especially needing to travel from Bologna.

We also like good wine, but Lambrusco is not our favorite, and frankly bubbly stuff gives me headaches. Is there other local wine?

I'm trying to track down restaurant reservations, if anyone has those to offer, I'd appreciate them.

We currently have hotel reservations at Hotel Metropolitan. My own preference might have been to stay outside of Bologna, perhaps in Parma. With an early morning flight out of BLQ on Sunday, we thought it advisable to be there the entire time.
