Boiling Corned 5LB Brisket

All,

I’ve followed the Cooks Ill. 6 day salt/spice cure to one day in fresh/changed water, (from Julia Childs), and now I’m poised on the brink of cooking.

I was going to follow the approx. 3 hour 8 quarts water simmering and skimming.

Any other method/suggestions?
