I'm planning on serving a Boeuf en Croute for Christmas. We will be 4 adults (and 3 small children, none of them big eaters as far as I know). Now I have a tenderloin in the freezer, but it's not very big, about 750 grams (approx 26.5 ounces). Will that be enough to feed 4 adults?
I'm not planning to serve any entree, starter, etc. With the beef, I plan to serve potatoes, carrots, brusselsprouts and baguettes. Also, there will be a rather heavy dessert (Ice cream, pears and chocolate sauce I think).
Now if you think the 750 grams tenderloin is too small for 4 adults, do you have any suggestions about other cuts I can add? I have a variety of cuts in my freezer (but unfortunately no more tenderloin than the 750 grams). Or would that just spoil the course?
