Boef Bourgigoune (sp?)

Prepared this meal yesterday for friends. Deglazed the pot twice, still charred the crap out of the bottom of the pan. Can't figure out why as I started with bacon drippings and used butter to sear the meat and veggies. Anyone know how to keep a pot from really charring on an "all day" kind of meal like this?
