Blue Smoke

Well after the rib fest left a bad taste in my mouth... ok fine it left no taste in my mouth cause i wasnt about to wait 3 hours for some ribs.... I decided to go get some blue smoke ribs!
Delicious... very simple straight forward slab of ribs.with a tiny bit of slaw, so you odnt feel jipped....... i had the sampler, so it was St louis, Kansas City and texas (BEEF)
the spare ribs were very tasty, smoky, and well piggy.... a little fatty and perfect. they were totally tender moist and I would have to give the Kansas city ribs the top marks for the spare ribs..... coupled with the kansas city sweet/spicy sausce ..... easly could have eaten another few of those.... but the beef texas ribs were run away winnners. Now i know that it is personal preference with spare and beef, but mine is with the texas pepper beef ribs. Im going back next week for a full order. the texture was perfect, the meat was melted onto the bone, a perfect crispy outside and the animal instinct to tear the meat off the bone was intense....i also wanted to tear my neighbors ribs apart... but i managed to control myself until next time. I guess that whole BBQ fest had me itching for some ribs...
enjoy the ribs here its easy you dont have to travel very far and it takes care of the itch....
