I sent my husband to the store the other night for blue cheese for a beet salad and he came home with this delicious Pt. Reyes blue, part creamy, part crumbly, fairly expensive, and very delicious. I would like to use it for dinner tonight, but don't know what to make!
Criteria are: not too involved, since I won't be home until 6:30, but some cooking/baking are fine; not horribly bad for us, since we already have the blue cheese, and not too expensive, again, the blue cheese. Also, I would like the blue cheese to shine, not be drowned out by other stronger flavors.
