blenheim apricots are here....

bought some blenheim apricots at Monterey Market in Berkeley yesterday and made some very good confiture with them today - peeled them (skins came off easily) and did a little chopping - put them into a pot with slightly less volume of sugar and simmered them until it thickened to coat a spoon - tasted it and added a few drops of lemon juice - done. tastes way better than any fresh apricot .... I tasted one fresh and it was pretty good but far better when it was converted. It only took 8 or 9 apricots to make a nice jar full.
