Help with bitter chopped liver

Just finished making 5# of chopped liver containing diced browned onion and chopped hard boiled egg. Fresh chicken livers were sautéed in a combination of schmaltz and vegetable oil. Why does it taste bitter and what can I do to lessen the bitterness? This is intended for
consumption at a Jewish food festival at our synagogue so I really need it to taste good!
