Billy Reed's Fried Chicken | Palm Springs

Last week's yahrzeit memorial was supposed to be held in the function room at Mr. Lyon's Steakhouse. But the fierce sand storm and power outages forced a change of venue and a scramble to put together some catered food items.

Fried chicken from Billy Reed's was picked up for the buffet table. Packed in styrofoam and served about 2 hours later, the piece of thigh with attached back that I scored was really good. The thin, golden brown and greaseless batter was still crisp, the fat on the skin was well-rendered, and the warm dark meat was tender and juicy. Simple of seasoning, tasting like buttermilk brine with salt and pepper, and no obvious herb or spice notes, Billy Reed's served up basic American-style fried chicken done expertly.

I've read the pans of Billy Reed's on this board over the years. If somehow you're forced to eat there, remember to get the fried chicken. Since this order held up so well, I'd recommend it for take-out for a hike in the desert or to enjoy as a poolside lunch.
