Want to make Big, Soft Sugar Cookies

Hi there I am trying to find a recipe for big, soft, sugar cookies. I want to use butter or butter and oil, or lard (no shortening, no margarine) and I don't want to use a cookie cutter. The ones I am thinking of are treated something like peanut butter cookies i.e., a ball of dough pressed down or slightly flattened before baking. They're large and doughy and substantial.

They have an almond or lemon or vanilla base. They are soft and chewy. I've had them with a little sparkling sugar on top, or with raisins in them.

I've had them a few times, and yet the recipes for sugar cookies that I'm finding seem to make the thin, cookie-cutter type, or seem to be made from margarine or shortening. Am I looking at the wrong cookie name? Does anyone know the ones I mean? I sure would like to make some!
