I got a big 11-pound rib roast for Thanksgiving (5 adults and 3 kids) and now I'm wondering whether it is too big to cook evenly. In the past, I have successfully cooked rib roasts about half the size (around 5 to 6 pounds). So now I'm thinking that maybe I should cut this 11-pound rub roast in half before cooking in order to let the heat penetrate better so that I don't have portions of the large 11-pound rib roast significantly overcooked and undercooked. What does everyone think? In terms of cooking the rib roast properly, would it be better to cut this large 11-pound rib roast in half and cook them together in the oven that way?
