Big Paella at Home!

afarya | Dec 26, 201601:02 AM     6

I made 16-inch paellas on gas stove burners for a few years and thought I am ready to step into the realm of larger paella preparation at home. I bought a 3 ring 24 inch gad burner and a large 28 inch pan. Now. I have a problem with direct heat! In order to get a good "socarrat" you need even heat distribution at the bottom of the pan, but I cannot find a big enough heat diffuser for my stove. I have seen professional cooks make 5 feet large paellas without socarrato; just a mushy moist mixture of rice and other ingredients, to avoid the problem of over heating and burning the base of the paella in large rings! I want to get the job done properly. Where can I get large heat diffusers or a remedy for that? Anyone can help?
