Hi all -- I have been giving the task of baking the shortcakes for a local youth function. Fresh, local strawberries will crown the cake, but I have well over 100 kids and adults to feed.
Anybody have a tried-and-true white or yellow cake recipe that will feed a big crowd?
How about a tried-and-true that can easily be doubled or more?
My favorite white cake is a chiffon-type cake -- as much as I love it, it's way too much fiddling around to separate and beat all the whites separately for this one....
I've debated a pound cake, but I think it's too much for this particular setup (I'm baking in a local clubhouse in aluminum baking pans...they're offering up the space and the electricity for the ovens -- and paying for the ingredients)
