Yesterday I had a solo lunch at Wild Ginger in Alameda. It specializes in the street food of Western China, namely Xi'an and Sichuan. The menu is fairly simple offering malatang, rou jiu mo, noodles and dumplings.
The house specialty is biang biang mian (hand-ripped noodles) with spicy cumin lamb, $12.99. This is available with soup, or the drier style with sauce, the way I tried it. I poked through the serpentine mass of wide, uneven thickness noodle in my bowl to see if I could find the cut ends. Sometimes there are no ends when the noodle is stretched into a ring with one noodle per bowl serving. But in this case I uncovered three ends, meaning that there were two or more noodles in my portion. The noodles were chewy and firm, and kind of doughy in the thickest parts. The thickened sauce adhered to them nicely. The amount of lamb was sort of scant. The dominant spice was red chile even though I had ordered mine "mild", making it plenty spicy for me. The cumin was in the background of the simple seasoning. Some shaved red onions, scallions, cabbage and leaf lettuce filled out the bowl.
