Beware the Arrowtooth Flounder!

Will Owen | Jul 30, 201503:32 PM     21

I was looking for a nice small piece of catfish to have for breakfast – fried catfish and eggs is a favorite of mine – but all my neighborhood Ralphs had was some nuggets, and really big fillets in the case. There was this "arrowtooth flounder," though, that I'd been wondering about, and it was quite cheap …

I'll spare the details, but that lovely flour-dredged piece of decent-looking fish not only failed to brown at all, it turned to mush. Not tasty mush, either. Oddly enough, the only other time I had that happen was with another piece from Ralphs, this one labelled "halibut."

So I guess there are fish one can't fry. I will contend, however, that any fish you can't fry has no business being caught, much less sold. Another possibility is that it had sat in its package too long – it was marked down – although it showed none of the usual symptoms of being over the hill (gummy to the touch, smells bad). I'll bring this up next time I'm in, but that's one fish that is off my list forever.
