I was just reading a very interesting article in the English-language edition of Al-Ahram, the semi-official paper in Cairo. The article's subtitle was: "Commercially-produced bread is threatening an age-old tradition of home baking." I've linked below if you're interested.
What really caught my eye, though, was a discussion of bread baking in the story where the writer referred to a bread called "bettaw" made with corn and fenugreek. Google turned up zero with that name. Anyone out there have a recipe to share? It sounds fascinating.
