people think of Diana Kennedy only as a great Mexican chef but long ago she wrote an English cookbook w/ many excellent recipes ( esp a Roast Aromatic Chicken that makes chicken taste like duck. Honest!)
MINDY’S RIFF ON DIANA KENNEDY’S GINGERBREAD
Very gingery, dense and chewy adapted from Nothing Fancy
All ingreds room temp.
½ c. chopped( ch.)pitted Prunes Combine these 3 and cook on med heat til almost dry and keep aside for later
½ T. peeled and minced fresh ginger .
¼ c. brandy
½ lb unsalted butter , soft In KitchenAid with paddle, beat few minutes, add br sug, and cream them together til fluffy,scraping up the bottom and sides of the bowl a few times.
6 ou. Dark brown sugar , lightly packed (break up any hard bits)
1 c. molasses Add slowly ; same with eggs.
2 lg eggs, lightly beaten
½ lb flour white and whole wheat (optional) Combine these 4 dry ingreds. and
2T gnd ginger add, just til combined.
1T. gnd cinnamon
1 tsp.+ cayenne
1/3 c. warm whole milk Combine these 3 to dissolve. Add to above.
1 tsp baking soda
1 1/2 T. espresso powder (Medaglio d’Oro, in Ital.specialty shops)Could sub. coffee powder
4 ou. Crystallized ginger, ch. * Add. Taste all. Add more spices to taste.
3 ou. candied orange peel, ch. (optional) Add. Add prune mixture. Don’t overmix,just enough so everything is well combined.
Pam(or like) and parchment paper
Put all in small Wilton cake pan, 11 x 14 x 2” (or 10 “or 12” round cake pan or equivalent, at least 3” deep) that has been Pam’d, lined on the bottom w/ parchment paper, and Pam’d again.
Heat cookie sheet pan in 325 degrees oven. Put gingbrd pan on this and bake about ½ hour til toothpick comes out clean and there is a slight crust around the edge, pulling away from the pan. (if you use a smaller pan, baking time could increase to 1 hr. 10 min.)
Let cool. Chill.Tastes better after a few days. Should be dense and chewy, not fluffy.
I dare you to find a chewy gingerbread recipe better than this!!!!!
