Belle Rouge Chicken roasting advice

I'm roasting a Belle Rouge chicken tonight and would really appreciate any tips. Paul, at the farmer's market said that if done correctly, the meat of a Belle Rouge chicken can be as tender and delicious as lobster. Would love to hear your suggestions and tips for doing it right!
