Belgian Waffles baking doesn't smell at all

Hi,

I am a big Belgian Waffle fan but I am currently facing 2 issues-

1) When I walk into certain waffle stores, I smell amazingly strong waffle smell which is very attractive. However, when I bake waffles, I don't get any baking smell at all. What changes should I make to have my waffle baking emit amazing smell? or what in the waffle are responsible for that amazing smell?

2) Though my waffle batter is thin and I bake my waffles at 180 degrees, waffles are very crispy and burnt on the outside but very raw and battery in the middle.

Note - I make egg-less waffles because some of my family members are allergic to eggs.

Your help will mean a lot to me.
