years ago, quanjude opened a branch in the US. They also served many duck dishes besides the straight roast duck. I was particularly fond of the duck tongue in aspic, aka crsytal duck tongue, shuijing ya she 水晶鸭舌.
Do all the other duck restaurants serve this as well as salted duck livers, soy-cooked duck gizzards (yazhen), mustard duck webs (jiemo yazhuang)? and do they also have a variety of other duck dishes ?- the quanjude in southern california had over 80 dishes (braised dishes, stir-fried, fire-roasted [huoliao] sauteed with thick sauce [cao-liu]).
