I recently asked for suggestions on how to prepare beets since my daughter (a toddler) really liked them and I had never even tasted them, let alone cooked them.
Anyway, I got a lot of good suggestions here, but I just went with roasting them to start out.
I wrapped them individually in tin foil and stuck them in the oven for about an hour at 400. Well, as you all promised, it is a bit messy, but it really wasn't so bad. Somebody had mentioned running them under cold water while removing the skins and now I understand why...boy were they hot!
Anyway, add me to the list of beet lovers -- I can't believe I have been missing out for 37 years! And my daughter has been eating them too.
(Tried to get my husband to eat them, but no dice. Oh well, more for us!)
