I received a lot of beets in my CSA. I thought I'd try my hand at beet ravioli; but I've never made this before and I'm looking for some guidance. I was thinking of roasted beets and goat cheese (chevre) as the filling. Has anyone tried this combination? What herbs/spices would compliment it? If I make this combination, what kind of sauce would I make? Any advice, hints, other ideas, etc. would be terrific. Thanks.
