I bought and cooked beets for the first time in my life yesterday, which is kind of embarrassing given my age. I did the simple boil, peel, and a little olive oil thing, but does anyone have recommendations for great things to do with beets? In particular, right now I'm trying to figure out what to do with the greens... I've put some into salads, and Deborah Madison's Vegetarian Cooking says you can do anything with beet greens that you can do with spinach, so I might just saute them up with olive oil and garlic. I'd love to hear any other recommendations, though.
