I am hosting a wine tasting/dinner club. One of the participants is visiting from overseas and is in awe of our Canadian Beef. I was thinking to highlight this ingredient. My budget is $40pp including pairings. (!!!!)
I have a few ideas, but I know I need to watch out for it becoming far too rich.
some possible dishes that first sprung to mind
Tartar (champagne)
Roasted marrow/arugula salad
bulgogi beef (lettuce wraps)
carne asada mini tacos
smoked bbq beef ribs
As you can see I am staying away from the expensive cuts of meat.
Any thoughts, suggestions? I am thinking that the roasted marrow should be moved, not sure where, is it too similar to tartar? Perhaps a tataki instead of tartar?
I would like a very light dessert to go with. Thinking of macerated berries with a touch of whipped cream or mascarpone.
