Do Ahead Beef Tenderloin?

Pappy | May 19, 2004 10:05 AM

I'm having a party tomorrow night and will have very little time after work.

Could I seaon a whole beef tenderloin tonite and sear it in a pan. Then keep it in the fridge overnight, so I just have to roast it tomorrow?

I'd like to not have to mess up the stove, and risk the smell of splattering oil in the house and on my clothes tomorrow right before the guests arrive.

Any thoughts would be appreciated.
