Help with beef stew! (Cast Iron Cooking Question)

I got an 8 quart cast iron dutch oven (Emeril's brand) from my mother in law for Christmas. (I wanted an enameled one, but she and my husband meant well, and he has promised to clean it.:) ) I want to use it tomorrow to make my first attempt at beef stew. I've never made it before, and I am looking for any nice, easy recipes and some advice.

The pot is pre-seasoned, but it recommends another seasoning which I will do tonight. I've also read that I should avoid cooking with tomatoes or anything acidic. However, the packaging says the pot is great for chilis and gumbos, which I would think call for tomatoes. Any insight?

Sorry I have so many questions. I have a cast iron skillet that I have used a few times, but this huge pot is a new world to me!
