Hi, I'm looking for some ideas on a beef roast for Christmas dinner. We raised our own steer last year and my freezer is full of amazing quality beef but I don't know if I have the right cut roast for this purpose! Here are the roasts I have to choose from:
Sirloin tip roast
Cross rob roast
Tri tip (just one of these, we only kept 1/2 of the steer)
They are all around 4 pounds and I have multiples of each(except the tri tip, and the brisket is way bigger, but not planning to use that). The meat is very well marbled, prime quality beef and is always delicious, so I have that going for me :). I was hoping for a herb/garlicky prime rib type sliced roast, served with baked mac and cheese. Will any of these fit the bill or do I need to rethink my plan?
