Beef Pho Meatballs

I've become a Pho junkie while inching my way across the many restaurants along Argyle Street- but what exactly are those beef pho meatballs made from???
they have the texture of superballs cut in 1/2, and taste like no other meatball I've had before-just rubbery grey matter speckled with fat...does anyone feel likewise, or are they an acquired taste?
