Anyone know of beef jerky in the city worthy of the great state of Texas? For fellow transplants: I'm looking for stuff like New Braunfels Smokehouse in south Texas, with lots of pepper and spice, stuff that gives your jaw a workout but hasn't killed the beefiness.
Also, there's another hunting delicacy I'm trying to find: cured, smoked, hard venison sausage, fairly dry but super flavorful. Lots of deer hunters have it made from their spoils; it's hard and cured to the point that it could survive a nuclear winter. Consistency of saucisson, but ten times more awesome.
