Bearnaise Sauce Finely Chopped Shallots

Hey, whenever i make classical french bearnaise sauce at home, i can always taste and feel the shallot bits in my sauce. It stands finely chopped in the recipe, and i do chop them as fine as i am able too. When i eat bearnaise at resturants ive never tasted or felt shallot bits. Am i i missing something?
