I'm actually in Olympia, but I have no problem with driving a ways to get what I want.
Here's my only real criteria. By the time the meat hits my plate, I want all the fat (and any sort of "gristle" to be gone.
So, I'm thinking of like a nice pulled pork sandwich, where the pork isn't at all fatty, with some BBQ sauce and mustard slaw all on a big, soft bun.
I'm willing to try other things too, I just can't handle fatty meat.
