BBQ Temperatures

I recently posted a question regarding BBQ and that my results were most of the time quite overdone, or cooked to quickly even though I tried to maintain the cooking temp around 250F. It was suggested I try something cooler, like around 210 or 220. I was all set to give this a try when I ran across some other information stating that unless you keep the BBQ temp above 250, all the nasty little organisms will not die and thus you could wind up with something that could cause some health problems. Does anyone have a solution to this dilemma?
