Here's the question:
BBQ fried chicken is one of the greatest, if not the greatest creations I've ever had the pleasure of trying. This dish was featured at the now long gone Paio in Silverlake, on the bottom of the Body Builders Gym (now home to an artisanal burgers joint, formerly the Comfort Cafe, and even before that the orginal location of Chameau). The cher at Paio created quite a miracle with this chicken.
Basically, I love fried chicken and I love hickory smoke bbq. And this combined the best of both worlds. An amazing, crunchy crust that shatters under your teeth coupled with the strong fragrance of smoke. Great stuff.
Is there someone still serving this anywhere in Los Angeles, or perhaps Orange County, or anywhere for that matter?
