I finally got to try Bayona last Saturday, and it met all my expectations. I got the sweetbread appetizer which I thought was delicious in the extreme, and I didn't have to share because all my dining companions turned squeamish over them. Ha. More for me.
My duck breast with pepper jelly was fork tender and succulent. The tastes I got of the pork chop (with cheddar spoonbread!) and the salmon and striped bass proved you couldn't really go wrong. The salmon in particular, it was breaded, which i didn't think I'd like, but the crunchiness really added to the tender salmon beneath. Also enjoyed the goat cheese salad and shrimp and black bean cake appetizer.
But of course my favorite part: dessert was chocolate beignets (with granulated sugar instead of powdered -- made it nicely crunchy) and a glass layered with chocolate mousse, chocolate pudding and coffee pudding. I hadn't remembered from the menu that the coffee pudding was a component, and after eating the top two layers of chocolate, the first bite of espresso flavor was electrifying.
Service was very nice, not to formal yet efficient, and I like the space, lots of mirrors and candles. Bayona's definitely in my top 5.
