After driving around the valley looking to avoid hour long waits at some of the usual Sunday brunch spots (Salt Lakers you LOVE you some Sunday breakfast), we ended up at Baxter's American. What a find! I'd imagine most are familiar with this place from it's earlier incarnation as Butterfly. I never had the chance to try it then, but I was shocked at how dead the place was on a Sunday at noon - prime brunch hour. We were maybe one of 5 couples in the place and what a beautiful space it is. It definitely has the feel of a Mesa Grill or any of a number of more trendy/upscale urban restaurants. And the food was perfect. I had one of the better frittata's I've encountered in a while and my wife had an outrageous Apple Cinnamon Waffle (I know it sounds like an Ihop menu item - it's not.).
I wish I had known of this place before catching Swell Season at the Depot - it will definitely be on my list before all shows at that venue. They have a cool bar and crank out delicious bloody marys.
