I made the Hazan bolognese, and yes, it was not what I was used to, but I loved it. Not so my family, though they are adventurous eaters. So I tried Batali's, and I have to admit that I (and most asuredly they) liked it so much better. It has pancetta, ground veal and ground pork and tomato paste, along with the white wine and milk. It was fun to make and, for now, is my make-on-Sunday bolognese for the freezer.
