I have recently found a source for very good beef tongue at the local farmer's market.
I boiled it, French style and used it for sandwiches.
It was great in texture and flavor but it was a little bland for me.
I heard that the Basque style preparation for tongue is wonderful, however my one friend from this region is draggin' his heels on giving it to me.
So does anyone have a recipe they love, Basque or other style which they would share with me?
